“A Different Kind of Pork: Enjoying an Endangered Species”

Join Karen Doyle of Georgiatown Farm as she hosts a pork tasting of her Red Wattle hogs. The Red Wattle is a unique breed of hogs. Deemed “the purest expression of how a pig should taste” by Chef Mike Poiarkoff, the Red Wattle is on the Livestock Conservancy’s Threatened Species list. Although only a few hundred Red Wattle hogs are registered, it is imperative that they are consumed and enjoyed by the public. It is through the popularity of the pork that the breed will continue to survive and thrive. You’ll taste Georgiatown Farm Red Wattle and learn more about humanely raising endangered livestock.
